For the Crust:
- 2 cups broccoli florets
- 1 cup sliced bell peppers
- 1 cup cherry tomatoes
- 3 tablespoons olive oil

- 1 cup feta cheese
- 1/4 cup cream cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Toss broccoli, bell peppers, and cherry tomatoes with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and lightly caramelized.
- In a food processor, combine feta cheese, cream cheese, lemon juice, and lemon zest. Blend until smooth and creamy. Serve the roasted vegetables with the whipped feta spread.
