For the Crust:

  • 2 cups broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup feta cheese
  • 1/4 cup cream cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Toss broccoli, bell peppers, and cherry tomatoes with olive oil, salt, and pepper. Spread evenly on a baking sheet.
  2. Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and lightly caramelized.
  3. In a food processor, combine feta cheese, cream cheese, lemon juice, and lemon zest. Blend until smooth and creamy. Serve the roasted vegetables with the whipped feta spread.

You can customize the seasonings to taste.
