For the Crust:
- 1 cup cottage cheese
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 2 flatbreads
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- Toss the cherry tomatoes in 1 tablespoon of olive oil, salt, pepper, and oregano, then roast them on a baking sheet for 15 minutes.
- Blend the cottage cheese and feta in a food processor until smooth and creamy to create the whipped feta blend.
- Spread the whipped feta mixture on the flatbreads.
- Top with roasted tomatoes and drizzle with the remaining olive oil.
- Bake the assembled flatbreads in the oven for 10 minutes or until the edges are golden.
