Description

A delightful flatbread topped with creamy whipped feta and roasted cherry tomatoes, layered over a cottage cheese spread.


Ingredients

For the Crust:

  • 1 cup cottage cheese
  • 1/2 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 2 flatbreads
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cherry tomatoes in 1 tablespoon of olive oil, salt, pepper, and oregano, then roast them on a baking sheet for 15 minutes.
  3. Blend the cottage cheese and feta in a food processor until smooth and creamy to create the whipped feta blend.
  4. Spread the whipped feta mixture on the flatbreads.
  5. Top with roasted tomatoes and drizzle with the remaining olive oil.
  6. Bake the assembled flatbreads in the oven for 10 minutes or until the edges are golden.

Notes

You can customize the seasonings to taste.
