A delightful tart featuring a buttery almond crust, creamy ricotta filling, tart cranberries, and a sweet honey glaze.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup ground almonds
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 cup ricotta cheese
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries
  • 1/4 cup sliced almonds
  • 2 tablespoons honey for glaze

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, ground almonds, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolk until dough forms. Press into a 9-inch tart pan.
  2. In another bowl, mix ricotta, 1/4 cup honey, and vanilla until smooth. Spread over the crust. Top with cranberries and sliced almonds.
  3. Bake for 25-30 minutes until crust is golden. Let cool slightly, then drizzle with remaining honey. Serve warm or at room temperature.

You can customize the seasonings to taste.
