For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup ground almonds
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 cup ricotta cheese
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- 1/4 cup sliced almonds
- 2 tablespoons honey for glaze
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). In a bowl, combine flour, ground almonds, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolk until dough forms. Press into a 9-inch tart pan.
- In another bowl, mix ricotta, 1/4 cup honey, and vanilla until smooth. Spread over the crust. Top with cranberries and sliced almonds.
- Bake for 25-30 minutes until crust is golden. Let cool slightly, then drizzle with remaining honey. Serve warm or at room temperature.
