Beautiful, flaky puff pastry roses filled with creamy Brie, tart cranberry sauce, and a drizzle of honey and fresh thyme.

For the Crust:
- 1 sheet puff pastry, thawed
- 4 oz Brie cheese, rind removed and sliced
- 1/4 cup cranberry sauce
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Flour for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out puff pastry sheet. Cut into 2-inch wide strips, then cut each strip into 4-inch long rectangles.
- Place a slice of Brie and a small spoonful of cranberry sauce at one end of each rectangle. Roll up from the filling end to form a rose shape.
- Arrange roses on baking sheet. Brush with egg wash. Bake 15-18 minutes until golden and puffed.
- Drizzle with honey and sprinkle with fresh thyme before serving warm.
