For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream, whipped
- 1/2 cup dried cranberries, chopped
- 1/4 cup shelled pistachios, chopped
- Extra cranberries and pistachios for garnish
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl until combined.
- Press the mixture into the bottom of dome-shaped molds or small cups to form the crust.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy.
- Gently fold in the whipped cream, followed by the chopped cranberries and pistachios.
- Spoon the cheesecake mixture over the crust in the molds, smoothing the top.
- Chill in the refrigerator for at least 4 hours or until set.
- Carefully unmold the cheesecake domes and garnish with additional cranberries and pistachios before serving.
