For the Crust:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dried cranberries, chopped
- 1/2 cup shelled pistachios, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the butter mixture until just combined.
- Fold in dried cranberries and chopped pistachios until evenly distributed.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with the bottom of a glass.
- Bake for 10-12 minutes, or until edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to a wire rack.
