For the Crust:
- 3 large sweet potatoes, peeled and cubed
- 1/4 cup unsalted butter, softened
- 1/4 cup heavy cream or milk
- 1/2 cup dried cranberries
- 1/2 cup walnuts, toasted and chopped
- 4 ounces brie cheese, rind removed and cut into small cubes
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
- Drain the sweet potatoes and return them to the pot. Add the butter, cream, maple syrup, cinnamon, nutmeg, salt, and pepper. Mash until smooth and creamy.
- Gently fold in the dried cranberries and toasted walnuts until evenly distributed.
- Transfer the mash to a baking dish. Scatter the brie cubes evenly over the top.
- Broil in the oven for 3-5 minutes until the brie is melted and bubbly. Serve immediately.
