Description

A creamy, sweet, and savory side dish featuring mashed sweet potatoes studded with dried cranberries and toasted walnuts, topped with pools of melted brie cheese for a decadent finish.

For the Crust:

  • 3 large sweet potatoes, peeled and cubed
  • 1/4 cup unsalted butter, softened
  • 1/4 cup heavy cream or milk
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, toasted and chopped
  • 4 ounces brie cheese, rind removed and cut into small cubes
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
  2. Drain the sweet potatoes and return them to the pot. Add the butter, cream, maple syrup, cinnamon, nutmeg, salt, and pepper. Mash until smooth and creamy.
  3. Gently fold in the dried cranberries and toasted walnuts until evenly distributed.
  4. Transfer the mash to a baking dish. Scatter the brie cubes evenly over the top.
  5. Broil in the oven for 3-5 minutes until the brie is melted and bubbly. Serve immediately.
