A fresh, vibrant dish featuring ripe avocado halves stuffed with a creamy pesto, mozzarella, and tomato mixture, inspired by Caprese flavors.

For the Crust:

  • 2 large ripe avocados
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup fresh mozzarella pearls or diced mozzarella
  • 1/4 cup basil pesto
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of flesh from each half to create a larger cavity, reserving the scooped avocado.
  2. In a medium bowl, combine the reserved avocado, cherry tomatoes, mozzarella, pesto, Greek yogurt, and lemon juice. Mix gently until well combined.
  3. Season the mixture with salt and pepper to taste. Spoon the filling evenly into the avocado halves.
  4. Garnish with fresh basil leaves and serve immediately.
