For the Crust:
- 2 large ripe avocados
- 1 cup cherry tomatoes, quartered
- 1/2 cup fresh mozzarella pearls or diced mozzarella
- 1/4 cup basil pesto
- 2 tablespoons Greek yogurt or sour cream
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- Fresh basil leaves for garnish
Instructions
1. Prepare the Crust:
- Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of flesh from each half to create a larger cavity, reserving the scooped avocado.
- In a medium bowl, combine the reserved avocado, cherry tomatoes, mozzarella, pesto, Greek yogurt, and lemon juice. Mix gently until well combined.
- Season the mixture with salt and pepper to taste. Spoon the filling evenly into the avocado halves.
- Garnish with fresh basil leaves and serve immediately.
