For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 12 oz smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 lb penne pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium-high heat. Add chicken and sausage, cook until browned, about 5-7 minutes.
- Add onion, bell pepper, and garlic to the pot. Sauté until softened, about 3-4 minutes. Stir in Cajun seasoning.
- Pour in chicken broth and bring to a boil. Add pasta, reduce heat to medium, and simmer for 12-15 minutes until pasta is tender and liquid is reduced.
- Stir in heavy cream and half of the cheddar cheese until melted and creamy. Season with salt and pepper.
- Top with remaining cheese, cover, and let sit for 2-3 minutes until cheese is melted. Serve hot.
