For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Season the chicken pieces with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
- Stir in the uncooked rice, dried thyme, and chicken broth. Bring to a simmer.
- Return the browned chicken to the skillet. Reduce heat to low, cover, and cook for 15-20 minutes, or until rice is tender and liquid is absorbed.
- Stir in the heavy cream and Parmesan cheese until the sauce is creamy and well combined. Cook for an additional 2-3 minutes to heat through.
- Garnish with fresh parsley before serving.
