Description

A one-pan wonder featuring tender chicken, fluffy rice, and a rich garlicky cream sauce, all cooked together for a comforting and easy dinner.

For the Crust:

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Season the chicken pieces with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Stir in the uncooked rice, dried thyme, and chicken broth. Bring to a simmer.
  5. Return the browned chicken to the skillet. Reduce heat to low, cover, and cook for 15-20 minutes, or until rice is tender and liquid is absorbed.
  6. Stir in the heavy cream and Parmesan cheese until the sauce is creamy and well combined. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh parsley before serving.
