For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 large zucchini, sliced
- 1 red bell pepper, chopped
- 1 small red onion, sliced
- 1 cup heavy cream
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a large baking dish.
- Season chicken breasts with salt, pepper, oregano, and thyme. Place in the baking dish.
- Arrange cherry tomatoes, zucchini, bell pepper, and red onion around the chicken. Drizzle with olive oil and toss lightly.
- In a small bowl, mix heavy cream, minced garlic, and half the feta. Pour evenly over the chicken and vegetables.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Sprinkle with remaining feta and broil for 2-3 minutes until golden. Serve warm.
