A comforting one-pan bake with tender chicken, colorful vegetables, and a creamy herb sauce, inspired by Mediterranean flavors.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 large zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 small red onion, sliced
  • 1 cup heavy cream
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a large baking dish.
  2. Season chicken breasts with salt, pepper, oregano, and thyme. Place in the baking dish.
  3. Arrange cherry tomatoes, zucchini, bell pepper, and red onion around the chicken. Drizzle with olive oil and toss lightly.
  4. In a small bowl, mix heavy cream, minced garlic, and half the feta. Pour evenly over the chicken and vegetables.
  5. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  6. Sprinkle with remaining feta and broil for 2-3 minutes until golden. Serve warm.

You can customize the seasonings to taste.
