A refreshing, crunchy salad that combines the anise-like flavor of fennel with sweet apples, tossed in a zesty lemon dressing for a bright, light dish.

For the Crust:

  • 1 large fennel bulb, thinly sliced
  • 2 crisp apples (such as Honeycrisp or Granny Smith), cored and thinly sliced
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons toasted walnuts or almonds, chopped (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until well combined to make the dressing.
  2. Add the sliced fennel and apples to the bowl with the dressing, and toss gently to coat all the pieces evenly.
  3. Sprinkle with chopped parsley and optional nuts, toss once more, and serve immediately for the best texture.
