- 1 large fennel bulb, thinly sliced
- 2 crisp apples (such as Honeycrisp or Granny Smith), cored and thinly sliced
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
- 1 tablespoon honey or maple syrup
- Salt and freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley
- 2 tablespoons toasted walnuts or almonds, chopped (optional)
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until well combined to make the dressing.
- Add the sliced fennel and apples to the bowl with the dressing, and toss gently to coat all the pieces evenly.
- Sprinkle with chopped parsley and optional nuts, toss once more, and serve immediately for the best texture.
