Description
Golden, flaky phyllo rolls filled with creamy feta and herbs, baked until crispy, then drizzled with spicy-sweet hot chili honey.

For the Crust:
- 8 sheets phyllo dough, thawed
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup melted butter
- 1/4 cup olive oil
- 1/2 cup honey
- 1–2 tsp red pepper flakes
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix feta, dill, parsley, salt, and pepper until combined.
- Lay one phyllo sheet on a clean surface, brush lightly with melted butter, then top with another sheet. Repeat to create 4 stacks of 2 sheets each.
- Cut each stack lengthwise into 3 strips. Place a spoonful of feta mixture at the bottom of each strip, then roll up diagonally, folding in the sides as you go.
- Place rolls seam-side down on the baking sheet. Brush tops with olive oil. Bake for 20-25 minutes, until golden and crisp.
- Meanwhile, warm honey and red pepper flakes in a small saucepan over low heat for 5 minutes. Drizzle over baked rolls before serving.
