A savory-sweet side dish featuring crispy potato medallions glazed with chili-honey and topped with crumbled feta and crunchy pistachios.

For the Crust:

  • 4 medium russet potatoes, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons honey
  • 1 teaspoon chili flakes
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped pistachios
  • 1 tablespoon chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potato slices with olive oil, smoked paprika, garlic powder, cayenne, salt, and black pepper until evenly coated.
  3. Arrange potatoes in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  4. In a small bowl, mix honey and chili flakes. Brush over baked potatoes and return to oven for 2-3 minutes.
  5. Transfer potatoes to a serving platter. Top with crumbled feta, chopped pistachios, and fresh parsley. Serve warm.
