For the Crust:
- 4 medium russet potatoes, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 2 tablespoons honey
- 1 teaspoon chili flakes
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped pistachios
- 1 tablespoon chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss potato slices with olive oil, smoked paprika, garlic powder, cayenne, salt, and black pepper until evenly coated.
- Arrange potatoes in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- In a small bowl, mix honey and chili flakes. Brush over baked potatoes and return to oven for 2-3 minutes.
- Transfer potatoes to a serving platter. Top with crumbled feta, chopped pistachios, and fresh parsley. Serve warm.
