For the Crust:
- 1 block (8 oz) feta cheese, cut into 1-inch cubes
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 large egg, beaten
- 1 cup fresh cranberries
- 1/4 cup maple syrup
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix panko breadcrumbs, olive oil, oregano, and garlic powder. Dip each feta cube in beaten egg, then coat in breadcrumb mixture. Place on baking sheet.
- Bake feta bites for 15-20 minutes until golden and crispy.
- While baking, toss cranberries with maple syrup, balsamic vinegar, and salt on another baking sheet. Roast for 10-12 minutes until cranberries burst.
- Serve crispy feta bites warm with roasted cranberry maple sauce drizzled on top or as a dip, garnished with parsley.
