Description

Creamy feta cheese cubes are coated in breadcrumbs and baked until golden and crispy, served with a tangy-sweet roasted cranberry maple sauce for a festive appetizer.

For the Crust:

  • 1 block (8 oz) feta cheese, cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 large egg, beaten
  • 1 cup fresh cranberries
  • 1/4 cup maple syrup
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix panko breadcrumbs, olive oil, oregano, and garlic powder. Dip each feta cube in beaten egg, then coat in breadcrumb mixture. Place on baking sheet.
  3. Bake feta bites for 15-20 minutes until golden and crispy.
  4. While baking, toss cranberries with maple syrup, balsamic vinegar, and salt on another baking sheet. Roast for 10-12 minutes until cranberries burst.
  5. Serve crispy feta bites warm with roasted cranberry maple sauce drizzled on top or as a dip, garnished with parsley.
