Golden, flaky phyllo rolls filled with creamy feta and herbs, baked until crispy and drizzled with a sweet and spicy honey sauce.

For the Crust:
- 8 sheets phyllo dough, thawed
- 1 cup crumbled feta cheese
- 2 tbsp chopped fresh dill
- 1 tbsp chopped fresh mint
- 1/4 cup melted butter
- 1/4 cup honey
- 1 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 egg, beaten (for sealing)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix feta, dill, mint, and black pepper until well combined.
- Lay one sheet of phyllo dough on a clean surface, brush lightly with melted butter, and place another sheet on top. Repeat to create 4 double-layered stacks.
- Cut each stack lengthwise into 3 strips. Place a tablespoon of feta mixture at the bottom of each strip, then roll up tightly, folding in the sides as you go. Seal the end with beaten egg.
- Place rolls seam-side down on the baking sheet, brush tops with remaining butter, and bake for 20-25 minutes until golden and crisp.
- While baking, warm honey and red pepper flakes in a small saucepan over low heat until combined. Drizzle over warm rolls before serving.

You can customize the seasonings to taste.
