Description

A vibrant and flavorful side dish featuring sweet honey-roasted butternut squash, tart cranberries, creamy feta, and crunchy pumpkin seeds.

For the Crust:

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/3 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons pumpkin seeds
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cubed butternut squash with olive oil, honey, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the squash in a single layer on the baking sheet. Roast for 25-30 minutes, or until tender and crispy around the edges.
  4. Remove from oven and let cool slightly. Transfer to a serving dish.
  5. Top with dried cranberries, crumbled feta, pumpkin seeds, and fresh thyme. Serve warm.
