Description

A crispy golden nest made of kataifi pastry, filled with a warm, melted spinach and feta center.

Ingredients

Scale

For the Crust:

  • 200g kataifi pastry (shredded phyllo dough)
  • 100g unsalted butter, melted
  • 200g fresh spinach, chopped
  • 150g feta cheese, crumbled
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
  2. In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft. Add spinach and cook until wilted. Season with oregano, salt, and pepper. Remove from heat and mix in crumbled feta.
  3. Separate kataifi pastry into strands. Brush with melted butter and press into muffin tin cups to form nests.
  4. Bake for 10 minutes until lightly golden. Remove from oven and press centers down gently with a spoon.
  5. Fill each nest with the spinach and feta mixture. Return to oven and bake for another 10-15 minutes until crispy and golden.
  6. Let cool slightly before removing from the tin. Serve warm.
