For the Crust:
- 1 package kataifi dough (shredded phyllo)
- 1/2 cup melted butter
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/4 cup ricotta cheese
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 egg, lightly beaten
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
- Separate kataifi dough into 12 portions. Brush each portion with melted butter and press into muffin cups to form nests.
- Bake nests for 15 minutes until golden and crispy. Remove from oven and let cool slightly.
- In a bowl, mix spinach, feta, ricotta, garlic, oregano, and black pepper. Stir in beaten egg.
- Spoon spinach-feta mixture into each kataifi nest. Return to oven for 10-12 minutes until filling is set.
- Let cool for 5 minutes before serving.
