For the Crust:
- 1 small seedless watermelon, cut into 1-inch cubes
- 1 cup shelled pistachios, finely chopped
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 large eggs, beaten
- Vegetable oil, for frying
- Honey or hot sauce, for drizzling (optional)
Instructions
1. Prepare the Crust:
- Pat the watermelon cubes dry with paper towels to remove excess moisture.
- In a shallow bowl, mix the chopped pistachios, flour, salt, pepper, and smoked paprika.
- Dip each watermelon cube into the beaten eggs, then coat evenly with the pistachio mixture.
- Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
- Fry the coated watermelon cubes in batches for 1-2 minutes, until golden brown and crispy. Drain on paper towels.
- Serve immediately, drizzled with honey or hot sauce if desired.
