For the Crust:

  • 1 small seedless watermelon, cut into 1-inch cubes
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 2 large eggs, beaten
  • Vegetable oil, for frying
  • Honey or hot sauce, for drizzling (optional)

Instructions

1. Prepare the Crust:

  1. Pat the watermelon cubes dry with paper towels to remove excess moisture.
  2. In a shallow bowl, mix the chopped pistachios, flour, salt, pepper, and smoked paprika.
  3. Dip each watermelon cube into the beaten eggs, then coat evenly with the pistachio mixture.
  4. Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
  5. Fry the coated watermelon cubes in batches for 1-2 minutes, until golden brown and crispy. Drain on paper towels.
  6. Serve immediately, drizzled with honey or hot sauce if desired.
