For the Crust:
- 4 large potatoes, peeled and boiled
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Vegetable oil for frying
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
Instructions
1. Prepare the Crust:
- Mash the boiled potatoes in a large bowl until smooth.
- Mix in mozzarella, Parmesan, parsley, salt, and pepper until well combined.
- Shape the potato mixture into small balls, about 1.5 inches in diameter.
- Roll each ball in flour, dip in beaten eggs, then coat with breadcrumbs.
- Heat oil in a deep pan to 350°F (175°C) and fry the potato balls until golden brown, about 3-4 minutes.
- In a small saucepan, melt butter over low heat, add minced garlic, and cook until fragrant, about 1-2 minutes.
- Drizzle the garlic butter over the crispy potato bombs before serving.
