Golden, crispy potato balls stuffed with gooey cheese and drizzled with savory garlic butter.

For the Crust:

  • 4 large potatoes, peeled and boiled
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • Vegetable oil for frying
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced

Instructions

1. Prepare the Crust:

  1. Mash the boiled potatoes in a large bowl until smooth.
  2. Mix in mozzarella, Parmesan, parsley, salt, and pepper until well combined.
  3. Shape the potato mixture into small balls, about 1.5 inches in diameter.
  4. Roll each ball in flour, dip in beaten eggs, then coat with breadcrumbs.
  5. Heat oil in a deep pan to 350°F (175°C) and fry the potato balls until golden brown, about 3-4 minutes.
  6. In a small saucepan, melt butter over low heat, add minced garlic, and cook until fragrant, about 1-2 minutes.
  7. Drizzle the garlic butter over the crispy potato bombs before serving.

Notes

You can customize the seasonings to taste.
