Bite-sized comfort with a gourmet twist, featuring creamy mashed potato balls stuffed with tangy goat cheese and coated in a crunchy walnut and garlic crust.

For the Crust:

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup walnuts, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chives, chopped
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. Boil the potatoes in salted water until tender, then drain and mash until smooth. Let cool slightly.
  2. Mix in salt, pepper, and chives. Take a tablespoon of potato mixture, flatten, place a small amount of goat cheese in the center, and shape into a ball, enclosing the cheese.
  3. Set up a breading station: flour in one bowl, beaten egg in another, and a mix of chopped walnuts, breadcrumbs, and minced garlic in a third.
  4. Roll each potato ball in flour, dip in egg, then coat thoroughly in the walnut mixture.
  5. Heat oil in a deep skillet to 350°F (175°C). Fry the bites in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.
