Description

Golden, crispy zucchini fritters served with a tangy lemon dill yogurt sauce for a light and flavorful appetizer or side dish.

For the Crust:

  • 2 medium zucchinis, grated and squeezed dry
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil for frying
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Grate the zucchini, place in a clean kitchen towel, and squeeze out excess moisture.
  2. In a bowl, combine zucchini, flour, egg, Parmesan, garlic, dill, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Drop spoonfuls of the mixture into the oil, flatten slightly, and cook for 3-4 minutes per side until golden brown.
  4. Transfer fritters to a paper towel-lined plate to drain.
  5. For the sauce, whisk together Greek yogurt, lemon juice, lemon zest, dill, and salt in a small bowl.
  6. Serve fritters warm with the lemon dill yogurt sauce on the side.
