For the Crust:
- 2 large cucumbers, thinly sliced
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1/2 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese (optional)
Instructions
1. Prepare the Crust:
- In a large bowl, combine the sliced cucumbers, julienned bell peppers, sliced red onion, chopped dill, and chopped parsley.
- In a small bowl, whisk together the olive oil, fresh lemon juice, honey, salt, and black pepper until well blended.
- Pour the dressing over the vegetable mixture and toss gently to coat all ingredients evenly.
- If using, sprinkle crumbled feta cheese over the top of the salad.
- Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
