Description

A refreshing and vibrant salad featuring crisp cucumbers, sweet bell peppers, and a zesty lemon-herb dressing, perfect for warm days or as a light side dish.


Ingredients

For the Crust:

  • 2 large cucumbers, thinly sliced
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the sliced cucumbers, julienned bell peppers, sliced red onion, chopped dill, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, fresh lemon juice, honey, salt, and black pepper until well blended.
  3. Pour the dressing over the vegetable mixture and toss gently to coat all ingredients evenly.
  4. If using, sprinkle crumbled feta cheese over the top of the salad.
  5. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

You can customize the seasonings to taste.
