Description

A savory, elegant toast topped with creamy ricotta and sautéed exotic mushrooms, finished with fresh herbs and a drizzle of balsamic glaze.

For the Crust:

  • 4 slices of rustic sourdough bread
  • 1 cup whole milk ricotta cheese
  • 1 pound mixed exotic mushrooms (such as shiitake, oyster, and maitake), sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Toast the sourdough bread slices until golden and crisp. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until tender and browned, about 8-10 minutes.
  3. Add minced garlic and thyme to the skillet, cooking for another minute until fragrant. Season with salt and pepper.
  4. Spread a generous layer of ricotta cheese on each toast slice.
  5. Top the ricotta with the sautéed mushroom mixture.
  6. Drizzle with balsamic glaze and garnish with fresh parsley before serving.
