Description

A hearty and comforting stew made with tender beef, root vegetables, and a rich apple cider broth, perfect for crisp autumn evenings.

For the Crust:

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 4 cups apple cider
  • 2 cups beef broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
  2. Add onion and carrots to the pot and sauté until softened, about 5 minutes.
  3. Return beef to the pot, add potatoes, apple cider, beef broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1 hour, or until beef is tender.

Notes

You can customize the seasonings to taste.
