For the Crust:

  • 1 whole turkey (1214 lbs), thawed
  • 2 oranges, sliced
  • 1 lemon, sliced
  • 1 cup fresh cranberries
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Rinse turkey and pat dry with paper towels.
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub mixture all over turkey, including under the skin.
  3. Stuff turkey cavity with orange slices, lemon slices, and cranberries. Tie legs together with kitchen twine.
  4. Place turkey in a roasting pan, breast-side up. Pour chicken broth into the bottom of the pan.
  5. Roast for 3-4 hours, basting every 30 minutes, until internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  6. Let turkey rest for 20 minutes before carving. Serve with pan juices.
