A festive dessert bar featuring a buttery maple cookie crust, creamy brie cheese, and a sweet-tart topping of cranberries and pistachios.

For the Crust:

  • 1 1/2 cups crushed maple-flavored cookies
  • 1/2 cup unsalted butter, melted
  • 8 oz brie cheese, rind removed and softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/4 cup shelled pistachios, chopped
  • 2 tbsp maple syrup for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix crushed maple cookies with melted butter until combined. Press firmly into the bottom of the prepared pan to form an even crust.
  3. In another bowl, beat softened brie, sugar, eggs, and vanilla extract until smooth. Pour over the crust and spread evenly.
  4. Sprinkle dried cranberries and chopped pistachios over the brie mixture. Drizzle with maple syrup.
  5. Bake for 25-30 minutes, or until the center is set and edges are lightly golden. Let cool completely before slicing into bars.

You can customize the seasonings to taste.
