For the Crust:
- 1 1/2 cups crushed maple-flavored cookies
- 1/2 cup unsalted butter, melted
- 8 oz brie cheese, rind removed and softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup dried cranberries
- 1/4 cup shelled pistachios, chopped
- 2 tbsp maple syrup for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix crushed maple cookies with melted butter until combined. Press firmly into the bottom of the prepared pan to form an even crust.
- In another bowl, beat softened brie, sugar, eggs, and vanilla extract until smooth. Pour over the crust and spread evenly.
- Sprinkle dried cranberries and chopped pistachios over the brie mixture. Drizzle with maple syrup.
- Bake for 25-30 minutes, or until the center is set and edges are lightly golden. Let cool completely before slicing into bars.
