A vibrant and nutritious salad featuring creamy chickpeas, tangy feta, and sweet dried cranberries, all tossed in a zesty lemon vinaigrette.

For the Crust:

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped red onion
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine chickpeas, feta cheese, dried cranberries, parsley, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  3. Pour the vinaigrette over the chickpea mixture and toss gently to coat all ingredients evenly.
  4. Let the salad sit for at least 10 minutes to allow flavors to meld before serving.
