For the Crust:
- 1 lb baby carrots
- 3 tbsp honey
- 1/2 tsp baking soda
- 4 oz goat cheese
- 2 tbsp heavy cream
- 1 tbsp lemon zest
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss carrots with olive oil, salt, and pepper. Roast for 20 minutes until tender.
- Whisk honey and baking soda in a bowl until fizzy. Immediately toss roasted carrots in the mixture.
- Whip goat cheese with heavy cream and lemon zest until fluffy. Dollop over carrots before serving.
