For the Crust:
- 4 slices of thick sourdough bread
- 2 cups sliced cremini mushrooms
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled goat cheese
- 1/4 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Place the sourdough slices on a baking sheet and toast in the oven for 5-7 minutes until lightly crispy.
- In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced mushrooms to the skillet and cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender. Season with salt, pepper, and fresh thyme.
- In a bowl, combine mozzarella, Parmesan, goat cheese, and cheddar cheese. Mix gently to blend.
- Divide the sautéed mushrooms evenly over each toasted bread slice. Sprinkle the four-cheese mixture generously on top of the mushrooms.
- Return the toasts to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
