For the Crust:
- 4 cups watermelon, cut into 1-inch cubes
- 1/2 cup cream cheese, softened
- 1/4 cup shelled pistachios, finely chopped
- 1 tbsp honey
- 1/4 tsp salt
- 2 tbsp balsamic glaze
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- Place watermelon cubes on a parchment-lined tray and freeze for at least 2 hours until firm.
- In a small bowl, mix cream cheese, chopped pistachios, honey, and salt until well combined. Roll into small truffle-sized balls.
- To serve, place frozen watermelon cubes on a serving platter. Top each cube with a pistachio cheese truffle.
- Drizzle with balsamic glaze and garnish with fresh mint leaves.
- Serve immediately while watermelon is still frosty.
