For the Crust:
- 1 store-bought or homemade pie crust
- 8 oz brie cheese, sliced
- 1 cup fresh or frozen cranberries
- 1/2 cup walnuts, toasted and chopped
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- 1 egg, beaten (for egg wash)
- 1 tbsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Roll out the pie crust on a baking sheet lined with parchment paper.
- Arrange brie slices in the center of the crust, leaving a 2-inch border. Top with cranberries and toasted walnuts. Season with salt, pepper, and thyme.
- Fold the edges of the crust over the filling, pleating as you go. Brush the crust with beaten egg wash.
- Bake for 25-30 minutes until the crust is golden and the filling is bubbly. Let cool slightly.
- While baking, warm honey in a small saucepan with red pepper flakes over low heat for 5 minutes to infuse. Drizzle over the galette before serving.
