A rustic, savory-sweet galette featuring creamy brie, tart cranberries, and crunchy walnuts, all drizzled with a spicy hot honey for a perfect balance of flavors.

For the Crust:

  • 1 store-bought or homemade pie crust
  • 8 oz brie cheese, sliced
  • 1 cup fresh or frozen cranberries
  • 1/2 cup walnuts, toasted and chopped
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes
  • 1 egg, beaten (for egg wash)
  • 1 tbsp fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Roll out the pie crust on a baking sheet lined with parchment paper.
  2. Arrange brie slices in the center of the crust, leaving a 2-inch border. Top with cranberries and toasted walnuts. Season with salt, pepper, and thyme.
  3. Fold the edges of the crust over the filling, pleating as you go. Brush the crust with beaten egg wash.
  4. Bake for 25-30 minutes until the crust is golden and the filling is bubbly. Let cool slightly.
  5. While baking, warm honey in a small saucepan with red pepper flakes over low heat for 5 minutes to infuse. Drizzle over the galette before serving.
