A flavorful one-pan meal featuring tender, herb-marinated chicken breasts, golden crispy baby potatoes, and fresh green beans glazed in butter.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss baby potatoes with 1 tbsp olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20 minutes until starting to crisp.
  2. Season chicken breasts with minced garlic, rosemary, thyme, salt, and pepper. Heat remaining olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden.
  3. Add green beans and butter to the skillet around the chicken. Pour in chicken broth. Transfer skillet to the oven and bake for 15-20 minutes until chicken is cooked through and green beans are tender.
  4. Remove from oven, let chicken rest for 5 minutes. Serve with crispy potatoes and drizzle with pan juices.
