For the Crust:

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 2 tablespoons olive oil

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix breadcrumbs, Parmesan cheese, garlic, Italian herbs, salt, and pepper.
  3. Dip each eggplant slice into the beaten eggs, then coat evenly with the breadcrumb mixture.
  4. Place the coated slices on the baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden and crispy.
  5. Serve warm with marinara sauce or a yogurt dip.

Notes

You can customize the seasonings to taste.
