A vibrant and elegant dish featuring roasted beets glazed with balsamic, served over creamy whipped goat cheese and topped with a warm spiced maple drizzle.

For the Crust:

  • 4 medium beets, peeled and quartered
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 4 ounces goat cheese, softened
  • 1/4 cup heavy cream
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender.
  2. In a small bowl, whisk balsamic vinegar and honey. Brush over roasted beets and return to oven for 5 minutes to glaze.
  3. While beets roast, whip goat cheese and heavy cream in a mixer until smooth and fluffy. Spread on serving plates.
  4. In a saucepan, warm maple syrup with cinnamon and nutmeg over low heat for 2-3 minutes, then remove from heat.
  5. Arrange glazed beets over whipped goat cheese, drizzle with spiced maple syrup, and garnish with fresh thyme.
