For the Crust:
- 8 sheets of phyllo dough, thawed
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 1/4 cup unsalted butter, melted
- 1/2 cup cranberry sauce
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix feta cheese, parsley, and black pepper until combined.
- Lay one phyllo sheet on a clean surface, brush lightly with melted butter, and place another sheet on top. Repeat to create a stack of two sheets.
- Cut the stacked phyllo lengthwise into three equal strips. Place a tablespoon of the feta mixture at the bottom of each strip, then roll up tightly into a log shape. Repeat with remaining phyllo and filling.
- Place rolls seam-side down on the baking sheet, brush tops with remaining butter, and bake for 20-25 minutes until golden and crispy.
- While baking, combine cranberry sauce, honey, lemon juice, and red pepper flakes (if using) in a small saucepan. Heat over low until warm and smooth, about 5 minutes.
- Serve rolls warm, drizzled with the cranberry honey sauce.
