Description

Juicy chicken breasts stuffed with a flavorful Mediterranean blend of spinach, feta, and sun-dried tomatoes, roasted to golden perfection.

For the Crust:

  • 4 boneless, skin-on chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 lemon, sliced for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix spinach, feta, sun-dried tomatoes, garlic, and oregano to make the stuffing.
  3. Carefully cut a pocket into each chicken breast and stuff with the mixture. Season outside with salt, pepper, and olive oil.
  4. Place chicken in a baking dish, skin-side up, and roast for 25-30 minutes until golden brown and cooked through.
  5. Let rest for 5 minutes before serving, garnished with lemon slices.
