For the Crust:
- 4 boneless, skin-on chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 lemon, sliced for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a bowl, mix spinach, feta, sun-dried tomatoes, garlic, and oregano to make the stuffing.
- Carefully cut a pocket into each chicken breast and stuff with the mixture. Season outside with salt, pepper, and olive oil.
- Place chicken in a baking dish, skin-side up, and roast for 25-30 minutes until golden brown and cooked through.
- Let rest for 5 minutes before serving, garnished with lemon slices.
