1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss the carrots with 1 tablespoon of olive oil and spread evenly on a baking sheet. Roast for 25 minutes until tender.
- In a blender, combine roasted carrots, grated ginger, and 1 tablespoon of olive oil. Blend until smooth, adding water if necessary for desired consistency.
- Serve the carrot-ginger dip with a medley of fresh vegetables such as sliced bell peppers, cucumbers, and cherry tomatoes.
