For the Crust:

  • 4 large carrots, peeled and chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil, divided

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss the carrots with 1 tablespoon of olive oil and spread evenly on a baking sheet. Roast for 25 minutes until tender.
  2. In a blender, combine roasted carrots, grated ginger, and 1 tablespoon of olive oil. Blend until smooth, adding water if necessary for desired consistency.
  3. Serve the carrot-ginger dip with a medley of fresh vegetables such as sliced bell peppers, cucumbers, and cherry tomatoes.
