For the Crust:
- 2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 4 oz goat cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon zest
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss potatoes with olive oil, garlic, rosemary, thyme, paprika, salt, and pepper until evenly coated.
- Spread potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
- While potatoes roast, combine crumbled goat cheese, parsley, and lemon zest in a small bowl.
- Transfer roasted potatoes to a serving dish. Sprinkle the goat cheese mixture over the top while warm. Serve immediately.
