For the Crust:
- 1 lb ground chicken
- 1 lemon (zest and juice)
- 2 tbsp fresh rosemary, finely chopped
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp olive oil for frying
Instructions
1. Prepare the Crust:
- In a bowl, combine ground chicken, lemon zest, lemon juice, rosemary, garlic, breadcrumbs, egg, oregano, salt, and pepper. Mix gently until just combined.
- Form the mixture into 4-6 patties, about 1/2-inch thick.
- Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, until golden brown and cooked through (internal temperature 165°F).
- Serve warm with a side salad or in pita bread.
