For the Crust:

  • 1 lb ground chicken
  • 1 lemon (zest and juice)
  • 2 tbsp fresh rosemary, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 2 tbsp olive oil for frying

Instructions

1. Prepare the Crust:

  1. In a bowl, combine ground chicken, lemon zest, lemon juice, rosemary, garlic, breadcrumbs, egg, oregano, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 4-6 patties, about 1/2-inch thick.
  3. Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, until golden brown and cooked through (internal temperature 165°F).
  4. Serve warm with a side salad or in pita bread.
