For the Crust:
- 8 slices of sourdough bread
- 1 cup fresh spinach leaves, washed and dried
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes in oil, drained and chopped
- 1/2 cup shredded mozzarella cheese
- 4 tablespoons unsalted butter, softened
- 1 teaspoon dried oregano
- 1/4 teaspoon garlic powder
Instructions
1. Prepare the Crust:
- In a small bowl, mix the softened butter with dried oregano and garlic powder. Spread the seasoned butter evenly on one side of each bread slice.
- Place a slice of bread, buttered side down, in a skillet over medium heat. Layer with a handful of spinach, followed by crumbled feta, sun-dried tomatoes, and shredded mozzarella. Top with another bread slice, buttered side up.
- Cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Repeat for remaining sandwiches. Serve immediately.
