Description

A gourmet twist on classic grilled cheese, featuring creamy feta, tender spinach, and tangy sun-dried tomatoes between golden, buttery bread slices.

For the Crust:

  • 8 slices of sourdough bread
  • 1 cup fresh spinach leaves, washed and dried
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes in oil, drained and chopped
  • 1/2 cup shredded mozzarella cheese
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

Instructions

1. Prepare the Crust:

  1. In a small bowl, mix the softened butter with dried oregano and garlic powder. Spread the seasoned butter evenly on one side of each bread slice.
  2. Place a slice of bread, buttered side down, in a skillet over medium heat. Layer with a handful of spinach, followed by crumbled feta, sun-dried tomatoes, and shredded mozzarella. Top with another bread slice, buttered side up.
  3. Cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Repeat for remaining sandwiches. Serve immediately.

Notes

You can customize the seasonings to taste.
