For the Crust:
- 1 sheet puff pastry, thawed
- 8 oz brie cheese, rind removed and cut into 1-inch cubes
- 1/4 cup shelled pistachios, finely chopped
- 1/2 cup raspberry preserves
- 1 tbsp water
- 1 egg, beaten (for egg wash)
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut puff pastry into 2-inch squares. Place a brie cube in the center of each square, then fold corners over brie, pinching to seal. Brush with egg wash and sprinkle with chopped pistachios.
- Bake for 15-18 minutes, until pastry is golden and puffed. Let cool slightly.
- Meanwhile, heat raspberry preserves and water in a small saucepan over low heat, stirring until smooth. Drizzle over warm brie bites and garnish with mint if desired. Serve immediately.
