Elegant, bite-sized appetizers featuring creamy brie encased in a golden, flaky puff pastry crust, topped with crunchy pistachios and a sweet-tart raspberry drizzle.

For the Crust:

  • 1 sheet puff pastry, thawed
  • 8 oz brie cheese, rind removed and cut into 1-inch cubes
  • 1/4 cup shelled pistachios, finely chopped
  • 1/2 cup raspberry preserves
  • 1 tbsp water
  • 1 egg, beaten (for egg wash)
  • Fresh mint leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut puff pastry into 2-inch squares. Place a brie cube in the center of each square, then fold corners over brie, pinching to seal. Brush with egg wash and sprinkle with chopped pistachios.
  3. Bake for 15-18 minutes, until pastry is golden and puffed. Let cool slightly.
  4. Meanwhile, heat raspberry preserves and water in a small saucepan over low heat, stirring until smooth. Drizzle over warm brie bites and garnish with mint if desired. Serve immediately.
