For the Crust:
- 1 small sugar pumpkin, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 8 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 clove garlic, minced
- 1/2 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 1/3 cup extra virgin olive oil
- 1 tablespoon lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss pumpkin rounds with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes until golden and tender.
- In a food processor, blend feta, Greek yogurt, and garlic until smooth and creamy. Set aside.
- In a small bowl, combine parsley, dill, extra virgin olive oil, and lemon juice. Season with salt and pepper.
- To serve, spread whipped feta onto each pumpkin round and drizzle generously with herb oil.
