A vibrant autumn appetizer featuring roasted pumpkin rounds topped with creamy whipped feta and a fragrant herb oil.

For the Crust:

  • 1 small sugar pumpkin, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 clove garlic, minced
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss pumpkin rounds with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes until golden and tender.
  2. In a food processor, blend feta, Greek yogurt, and garlic until smooth and creamy. Set aside.
  3. In a small bowl, combine parsley, dill, extra virgin olive oil, and lemon juice. Season with salt and pepper.
  4. To serve, spread whipped feta onto each pumpkin round and drizzle generously with herb oil.
