For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 cups fresh kale, stems removed and chopped
- 1 ripe avocado, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon water
- 1/4 cup chopped walnuts for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.
- While sweet potatoes roast, prepare the feta drizzle by blending feta cheese, Greek yogurt, lemon juice, and water in a small blender until smooth. Set aside.
- In a large bowl, massage kale with a pinch of salt until slightly wilted. Divide kale among serving bowls, top with roasted sweet potatoes, avocado slices, and drizzle with feta sauce. Garnish with chopped walnuts before serving.
