For the Crust:

  • 2 boneless, skinless chicken breasts, pounded to even thickness
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 4 cups mixed salad greens (e.g., romaine, spinach, arugula)
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons honey or maple syrup
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon extra virgin olive oil

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6-7 minutes per side until golden and cooked through. Let rest for 5 minutes, then slice.
  2. In a large bowl, combine salad greens, avocado slices, cherry tomatoes, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, honey or maple syrup, Greek yogurt, and extra virgin olive oil until smooth to create the lime drizzle.
  4. Arrange the salad on plates, top with sliced chicken, and drizzle generously with the lime dressing. Toss lightly if desired and serve immediately.
