For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled blue cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until golden and tender.
  3. In a small bowl, mix pecans with honey. Sprinkle over sweet potato rounds along with blue cheese and cranberries. Return to oven for 5 minutes until cheese softens.
  4. Remove from oven, garnish with fresh thyme, and serve warm.

Notes

You can customize the seasonings to taste.
