For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, sliced into small pieces
  • 4 fresh figs, sliced
  • 1/2 cup candied pecans, roughly chopped
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange in a single layer on a baking sheet.
  2. Roast for 20-25 minutes until golden and tender, flipping halfway through.
  3. Top each round with a piece of brie, a fig slice, and candied pecans. Drizzle with honey and sprinkle with thyme before serving.
