An epic vegetarian centerpiece featuring a whole roasted cauliflower with a molten cheese fondue core, perfect for special occasions.

For the Crust:
- 1 large head cauliflower
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tbsp butter
- 1 tsp Dijon mustard
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Trim cauliflower leaves but keep the core intact.
- In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Brush mixture evenly over cauliflower.
- Place cauliflower on a baking sheet and roast for 30-35 minutes until golden and tender.
- While cauliflower roasts, prepare cheese fondue: In a saucepan over medium heat, melt butter, then add cream, cheese, and mustard. Stir until smooth.
- When cauliflower is done, carefully carve out the core (leave walls intact) and pour in warm cheese fondue. Serve immediately.
