An epic vegetarian centerpiece featuring a whole roasted cauliflower with a molten cheese fondue core, perfect for special occasions.


Ingredients

For the Crust:

  • 1 large head cauliflower
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1 tsp Dijon mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Trim cauliflower leaves but keep the core intact.
  2. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Brush mixture evenly over cauliflower.
  3. Place cauliflower on a baking sheet and roast for 30-35 minutes until golden and tender.
  4. While cauliflower roasts, prepare cheese fondue: In a saucepan over medium heat, melt butter, then add cream, cheese, and mustard. Stir until smooth.
  5. When cauliflower is done, carefully carve out the core (leave walls intact) and pour in warm cheese fondue. Serve immediately.
