For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 1/2 cup sugar
- 2 large lemons, juiced
- 1 tablespoon lemon zest
- 3 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 2 tablespoons sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, press into mini tart pans.
- Whisk together egg yolks, lemon juice, zest, and condensed milk. Pour filling into crusts.
- Bake for 10-12 minutes. Beat egg whites with cream of tartar, gradually adding sugar until stiff peaks form. Top tarts with meringue and bake for an additional 10-12 minutes.
