Description

Delicious mini tarts with a graham cracker crust, tangy lemon filling, and fluffy meringue topping.


Ingredients

For the Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/2 cup sugar
  • 2 large lemons, juiced
  • 1 tablespoon lemon zest
  • 3 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, press into mini tart pans.
  2. Whisk together egg yolks, lemon juice, zest, and condensed milk. Pour filling into crusts.
  3. Bake for 10-12 minutes. Beat egg whites with cream of tartar, gradually adding sugar until stiff peaks form. Top tarts with meringue and bake for an additional 10-12 minutes.
